“My Life as a Mrs “Gnocchi in Parmesan Garlic Sauce

Yield: 3-4 servings

Prep Time: 5 minutes

Cook Time: 10-15 minutes

Total Time: 15-20 minutes

Gnocchi, Parmesan, Garlic, and butter – does it get any easier?!

Ingredients:

1 pound gnocchi (or other pasta)
4 tablespoons unsalted butter (1/2 stick)
2 cloves garlic, grated
1 cup freshly grated parmesan
1/4 cup cooking liquid
fresh cracked pepper
salt

Directions:

Cook gnocchi according to the package instructions (I like to salt the water). Be sure to reserve 1/4 cup of the cooking liquid.

In a saucepan, melt the butter over medium-high heat. Once the pan is hot, add the garlic and saute for 1 minute (stirring constantly. Add the cooked and drained gnocchi, top with parmesan, and cooking liquid. Stir until nice and creamy. Reduce heat to a low simmer and allow the liquid to reduce (about 3-4 minutes). Season with salt and pepper to taste.

Voila! Dinner is served! Pair this is a nice bright salad and call it a day!

MotherStucker in Motion: Folly Beach

Ready for some R & R?  Calm and relaxed, Folly Beach is arguably the best beach in South Carolina. Known as “the edge of America,” Folly Beach is a seven-mile-long barrier reef located just eight miles south of Charleston — the closest beach to the city.  This MotherStucker visited Folly Beach for the first time in July 2011 and fell in ❤ !

Folly Beach is a great place to play in the waves, collect seashells, and walk to the lighthouse. A fishing pier and beautiful views make Folly Beach one of the last old-timey, “shabby” beaches in the area. Folly Beach is also one of the best surfing destinations on the East Coast and is dog friendly! If you’re a history buff, Folly abounds with Civil War history.  Shop the quaint (not junky) gift stores along Center Street and enjoy traditional seafood feasts at local dive (again, a compliment!) eateries. Upcomng events include the Festival of Lights (now through 12/31/12), Parade of Boats (12/1/12) and Charleston Sleigh Rides (12/14 – 12/31/12)  See you at Folly Beach, South Carolina MotherStuckers!
